The major element in the proposal is an articulated oven stack, a spatial device and a mechanism for environmental control. The oven distends vertically through the building forming warm or cool coffered observation spaces for the public. These spaces are also utilized by the serving staff to limber up or warm down. The whiffs of voyeurism are imbedded in the sight lines of the design.

A series of mechanical devices, each with their own specific attributes, add to the theatre of production and consumption. The automated forms of servery and the serving staff deliver a carefully choreographed service. A dynamic façade that mediates daylight and acts as a rain screen is seen as a two-way backdrop.



Bartlett design units 14 and 19 jointly invite their incoming students to undertake a comprehensive design project. The project is supported by weekly seminar/crits by Professors Gage and Spiller. The project started with a meal, prepared by the students, which was loosely based on quotations from Caréme and Marinetti.

The project site is opposite The Place dance studio in London. Students were asked to design a menu, a restaurant and the associated restaurateur’s accommodation. The Pie shop is centred round the performance of making and delivering both ‘take away’ and ‘eat in’ pies. Staff are assumed to be out of work, or ‘resting’ dancers.
