We believe that food is not a luxury item, but an essential part of life that deserves a central role in society. Here we believe in balance and transparency, and base the philosophy of food sustainability and equality to the life that occurs within the complex.The Sitopian City is a concept that focuses on the rituals of food growing, transformation consumption. Sitopia takes on a hybrid nature as Dwellers, Growers and Gastronomist's are able to be a part of every aspect of food production, transformation, consumption and distribution. The increasing importance of experience and the consumer behaviour meant that a hybrid concept combining restaurant typologies with the food market needed to be utilised to reach a wider target group. By juxtaposing themes of transparency, consumerism, food production, culinary pleasure, the spaces occupied by the gastronomic activities will be the bridge between the Granton community, the wider context of Edinburgh City and the dwelling inhabitants.
